Geraniol, Nerol & Linalool.
They are isomeric terpenic alcohol derivatives. They have floral fragances from sweet to citric.
Hydroxyacetone.
It is an important chemical building block for fragance and flavour syntesis.
Metylglyoxal.
It is an important chemical building block for fragance and flavour syntesis.
Acetoin & Diacetilo.
They are naturally produced in fermented products.
They are responsable for giving butter it characteristic odour and they are mainly used in margarina, milk derivatives and bakery.
Benzaldehyde.
It is the simplest aromatic aldehyde. It has got an almond-like odour which makes it highly attractive in food and cosmetic industries.
Moreover, benzaldehyde is an important building block for synthetizing high valued compounds used in fine chemical and pharmaceutical industries.
Linear aldehydes C3-C12.
They are extremely used as additives due to the fruit and fresh odours they give to formulations.
The most representative member of this family is hexanal which has a characteristic freshly cut grass odour.
Furaneol.
This compound is produced naturally in strawberries and gives them their characteristic fragance and flavour. Consequently, it is extremely important in food and cosmetic industries.
